Avocado devilled eggs

Our devilled eggs are a devilishly delicious treat. Filled with avocado and chives, they are ideal as a starter.

Preparation:

  1. Hard-boil the eggs for ten minutes and immediately rinse under cold water. Once cooled, peel the eggs and halve lengthways. Using a spoon, carefully remove the yolk and place in a bowl.
  2. Halve the avocado, add the flesh to the egg yolk together with 50 ml water, and mix well until smooth. Season with mustard, cider vinegar, Hermesetas Granulated, salt and pepper.
  3. Fill the mixture into a piping bag and use to fill the empty egg halves. Garnish with freshly ground pepper and chives.
